Yes, plenty of people do. You are welcome to buy your own suite and tiles, and it is worth a conversation before you order so nothing arrives that will not fit the space.
Will I be without a bathroom the whole time?
For most of it, yes, which is why the timescale matters. If it is the only bathroom in the house that gets planned around so the room is out of use for as short a time as possible.
